Take a look at what they are doing to gas stations already. And gas stations aren't fighting back.
Tech researchers Stephen Hilt and Kyle Wilhoit set up monitoring systems to see if hackers would take the bait. They got lots of bites. Some weren't attacked, just “pinged” so that hackers could verify that they got in. They left a marker so they could return to wreak havoc later. But that wasn't the end of their test.

I will not pay at the pump anymore. At Christmas I used my bank card at two gas stations in Tampa and got burned for $1156 by some Mexican. We had pictures/video, licence Plate nimbe, and vin number and the cops did nothing.
